Upon further testing/inspection, I with the assistance of someone else have found that either the LNAV or VNAV in combination with Auto Throttle causes them to freeze up.

Lately I've been having the bug of when coming in on a final approach and turning A/P & A/T off, I cannot move my throttles. It's like the key binds don't work, not even using my mouse to control the throttles works. They get stuck at about 59.4% and the quadrants will not move a millimeter. This is really annoying me because I've had good approaches get ruined by this and I've done everything I can think about to fix it. If anyone else is having this issue please bump this or something. I've asked for help via the Thresholdx / LevelUp discord and the thing that they had said was that XPRealisim and the LevelUp 737 don't cooperate, but even after disabling XPR for the flight I ran into the same issue.
